Spanish omelet

 

Ingredients for 2 people: 

 

4 eggs

2 potatoes ( medium size )

half onion

baking powder

olive oil

salt

 

 

Peel the potatoes, chop in small pieces, add salt and fry them in olive oil in a saucepan. Beat the eggs and add salt, and 1/2 teaspoon of baking powder to get a fluffy omelet ( you can add also 2 tablespoons of milk, optional). When the oil is hot, reduce the heat and add the eggs and the potatoes. Mix them with a fork. Fry the omelet until the bottom gets golden brown. Use a plate to help you carefully to turn the omelet over in the pan and fry the other side.
