Pork "libritos"

 

Ingredients: 

 

boneless pork chops

honey cured ham

white sandwich cheese

bread crumbs

eggs

salt

pepper

olive oil

 

 

Make a longitudinal cut in the chops, so that you can open them like a book (butterfly the pork chops). Put inside a piece of cheese and a piece of ham, trim to fit. Close the end of the chop with a toothpick. Salt and pepper the chops. Beat the eggs and soak the pieces of pork in the eggs, covering them after that with the bread crumbs. Fry in hot olive oil with low fire.
