Escalopa

 

Ingredients: 

 

pieces of thinly sliced beef

bread crumbs

parsley

eggs

Parmesan cheese

lemon

salt

pepper

olive oil

 

 

Salt and pepper the steaks, cover them with lemon juice, and put them inside the fridge about 1-2 hours prior to cooking. Mix the bread crumbs, parsley, and the Parmesan cheese ( optional ingredient ). Make a couple of tiny cuts (about 1/2 inch long, through the meat) on each quarter of the Escalopa to prevent warping and curling during frying (it should look like a bear skin rug, with the tiny cuts where the legs should be). Beat the eggs, and soak the Escalopas in the beaten eggs. Cover the meat with the bread crumb mix. Repeat the process, it is best to apply 2 coats. Fry the Escalopas in hot olive oil, with very low fire.
