Crema Catalana

(Catalan cream)

 

Ingredients: 

 

8 tablespoons of sweet condensed milk

2 tablespoons of starch

4 eggs

1/2 cinnamon stick

sugar

 

Mix the starch with 4 tablespoons of cold water. Add the 4 yolks and 2 whites of the eggs ( which previously you have beaten ) and pass the mix through a fine colander. Mix in a pan the sweet condensed milk, 2 cold water glasses and the cinnamon. When the mix is hot, remove the cinnamon stick and throw the milk on the eggs, slowly and stirring all the time. Fill a container with water, let it boil and place the pan on the top, until you get a compact paste. It's very important not to let the paste boil. Throw the cream in a bowl, or individual bowls, let it cool, cover it with sugar and burn the sugar with a hot iron
